Winemaking: A mix of de-stemmed and whole-bunch. Very few of the whole bunches broke in 2019, leading to a particularly gentle maceration. An 8 day maceration in a wooden open-top fermenter. Aged in barrel, bottled with no additions.

Soil: Sand and schist
Yield: 45 hl/ha
Tired of the constraints of the classroom, former maths teacher Philippe set up shop in 2008. Now farming an eight-hectare spread across 16 parcels around Faye d’Anjou and Faveraye. Soils are mostly porous sand and schist with only a little clay. Vines are a mix of Chenin Blanc (4ha), Cabernet Franc (2ha) and some Grolleau (with a bit of Pineau d'Aunis in it - 2ha). Sulphur use is kept to a minimum with only a tiny bit added in the pied de cuvée for each wine.
