Al's been getting stuck in this week, spending October down in Salisbury, picking, pressing and processing with Nicola & Dan from Offbeat and Hugo of Domaine Hugo alongside our friends Paris Barghchi - working & learning with Nicola and Daniel for vintage, latterly of the wonderful Peg. This week they were joined by the delightful Emily-Rose Lucas and Sam Munstermann - having just finished up at UTB favourite Where The Light Gets In, the pair are leaving their mark on some British fruit before heading on a trip cooking across Australia.
Last weekend was mostly spent processing fruit from our pals down at [Ham Street] and this week, picking on the farm for Domaine Hugo began in earnest.
Despite a year of profound heat in the UK, Hugo's rich and healthy soil, dense with cover crop (see if you can spot Emily & Sam sinking into its depths below) means fruit has fared well, and he remarked recently it's been a relatively easy year.
Just before harvest they were diligently shoot thinning, and with yields initially almost too big, they were dropping a few bunches throughout veraison, ensuring those that remain were at the ideal ripeness Hugo would like. It's paid off- quality over quantity!
We'll keep the updates coming, and meanwhile we can continue to enjoy the labours of year's past. We have a little stock remaining of Ham Street's 2021 Field Blend, Hugo's Botleys Col Fondo and his 2019 Trad Method, along with Offbeat's Cascade, and their 369 - drinking particularly well with with pizza this week.
